Normally you use onion, assorted peppers, garlic courgette and tomatoes add a few mixed herbs too just put it in a pan and saute till soft .

Sweet peppers and i do not get on so i use french and runner beans instead, a sprinkle of marigold bouillon and a drizzle of olive oil and bake in the oven, good hot or cold.

Oh Ok, it just seemed a bit strange out of the blue.

I make mine with aubergines like Val's Recipe but I suppose when you want to use all the courgettes up

I'll get shot for this but, when making ratatouille to freeze what veg do you use and how do you prepare it?  Perhaps you could answer over on the cooking site.
