leeks & blanching
« on: September 08, 2008, 13:02 »
one comment i have heard is that leeks after freezing are only suitable in casseroles and soups; therefore that freezing makes them unsuitable as a stand-alone vegetable.
Personally, i find last year's leeks to be quite tough after about 3 months of freezing and then defrosting (and my wife had not blanched them)
What is the consensus?
Does blanching make a difference to the result ?
