I know there is one, i'm sure i've read it before but I can't find it now that i'm just about to make them.  I've used the search option and found soup, frittata etc but no fritters ... HELP!

That's because it's courgettes - plural.

Courgettes AND fritter - OK
Courgette* AND fritter - OK
Courgette AND fritter  

Took me a few goes.

I'll bare the search tip in mind for other things too, never thought about using plurals.

Plurals are a big bother in searches , just think of fungus and fungi or bacterium and bacteria.

I can't read all that link through, here is what I do:

2 decent courgettes, 2 carrots, 2 celery sticks, all  grated

1 med onion, 4-5 garlic cloves, good bunch of parsley, well mashed to bits

salt, pepper

1 egg and flower to make a thick batter

and some oil to fry... serve with nothing or anything you like.

I've not tried it yet but I think you could do it with gram flour and make a sort of badjhi

over here they slice the courgette thinly dust in seasond flour and deep fry like chips , drain and serve with taziki or garlic sauce , serve as soon as cooked as they go limp quick .
