Newbie....needing rhubarb help!

Hi all. Am new to picking up the reigns on growing my own! I have lived in central Scotland for 20 years and inherited a somewhat overgrown and unruly 'grow your own' terrace' which is now mostly lawn, moss and weeds! Except, that is, for the quadrant of rhubarb which seems completely indestructible! We have never harvested it and the plants have just died away and regrown year after year. Well, this morning, whilst walking the dogs, it looked to me that four of the plants seems to have been asleep all year and look young and fresh. I picked four stalks, one from each plant and immediately removed the leaves, having read that they contain unpleasant toxins which are harmful. However, I am now looking at four stalk on my kitchen countertop that seem to be begging to be eaten (in this house, most likely as a crumble)...is it OK to do so? All help greatly appreciated!

Welcome to the site  :D

It should be OK although they may be rather stringy or acidic.

Don't harvest too much more, as at this time of the year the plant needs to concentrate on preparing itself for winter.
I try to take one day at a time, but sometimes several days all attack me at once...
