Doing a chardonney and it says it shouls have a gravity reading of 995 or below. It is reading 1002 and I repeated this on 2 consecutive days and it still says 1002. How can I get it to 995 or would it be alright to leave it and go onto the next stage of clearing?

How long as it been fermenting for?
Is it warm enough?
Does it taste too sweet for your palet?

I would leave somewhere warmish (~20°C) until next weekend and remessure.  I think it would be very difficult to try to restart the fermentation at this low level. 

You will need to be very carefull as it could restart fermentation on its own after you have bottled it.  If you have glass demi johns then I would suggest leaving somewhere cool and dark for 6 month before bottling - I would recommend this anyway as bulk maturing really improves flavour.

Thisis a Young's kit. Started on the 12/11 and it has been living on a heat mat. Tasted it and wow that tastes nice and not sweet. Should I leave it or carry on to the next stage of wine stabilser and finings?

If it tastes OK then you should be OK.  I'd still use Campden tablet and potassium sorbate to kill off the yeasties so it can't restart.

If you can leave it in DJ's that that will be good.

Be careful with heat mats, as they are not thermostatically controlled you can end up getting the liquid too warm, which will kill off the yeast, and cause the yeast to leave some nasty off flavours in your wine.
