Preserving roasted vegetables

As a new grower of veg and wanting to make the most of my harvest, I am struggling to find information on how to preserve roasted veg such as peppers and courgettes for use in lasagne and pasta dishes.  Does anyone have any tried and tested methods?

I would look at drying them or putting them in oil.
Maybe flavour the oil with rosemary.

Do you have any advice about storing veg in oil please?  Other forums on cooking and preserving that I've looked at seem to suggest this method is not suitable for domestic preserving as there is a risk of botulism!  I have to avoid sugar and vinegar so am only really left with freezing or gluttonising when faced with a glut, and I just don't enjoy frozen veg half so much as fresh, but roast veg in oil is a top favorite ... any tips on methods and on store-times please?

If you make your roast veg in the usual way then add passata to make a chunky sauce which you could freeze, sort of a ratatouille

Yes, stew-type stuff is indeed the best way to freeze, you're right, but I do love roast veg bottled in oil, so that's what I'd really like to find a way to do ... without dying of botulism poisoning of course!

I've seen it in the deli, so I know it can be done too.  It must be out there somewhere. Have you Googled  :D

Yup, hence disappointment at the apparently universal assertion that it can't be done 'in domestic kitchens'... so perhaps requires some super hot high pressure industrial process, but I'm guessing the Romans were preserving stuff in oil going way back, so it must be do-able ... only I'm not sure if I'm ready to risk experimenting on my loved ones till I've read at least one green light method!
