They don't all turn yellow/orange - some even stay green until they've been stored for quite a while - I still had a green one at New Year  8)

You do notice a change in their colour when they get ripe though and (apart from the ginourmous ones) the size will tell you.
Also the skins get a lot tougher so you can hardly dig a fingernail in.

Try a high nitrogen foiliar feed. May I suggest a feed of pure liquid nitrogen at -196 oC?
