Salty Pickles
« on: September 17, 2011, 19:19 »
Please can anyone help?  I have recently made giant pickled onions and red cabbage and onion pickle, but they both taste salty  :tongue2:.  I obviously didn't rince the onions adequately but is there any way I can salvage them?  It would be heartbreaking to have to throw them away, but I know this may be my only option.

The only thing I could suggest with the onions is soaking them in water for an hour or so before eating to reduce the saltiness.

If you dry brine i.e. just use salt sprinkled over the peeled onions, you do get a very salty result.  Wet brining with a salt and water mix gives a less salty taste  :)

Not sure about the red cabbage - you could try soaking it but it might leach out all its colour
