Hi guys I have been absent for ages due to no laptop :( now im back :)
I need advice. I was given some frozen plums on Thursday and left them to defrost in the bags then forgot as had some emotional stuff to deal with. Now they are bubbling in the bags can I rescue them and make wine at all? I need an idiots guide to please and a recipe.

Bung 'em in a food grade plastic bucket add loads of sugar and wait for three days then find the close fitting lid and fit a bubbler to that. Find somewhere dark to store it and pour the liquid off the lees in about a month.
Pour the liquid into a regular fermenting vessel untill all bubbling has stopped.

The "bubbling in the bags" could be (and probably is) wild yeast. I had this with some grapes a few weeks back, what I would do with the plums is throw a campden tablet in. Like Kleftiwallah said.."Bung 'em in a food grade plastic bucket" crush 1 tablet per gallon on must and stir it in.
Leave for 24 hours, then work out the sugar you'll need.
