Yes - lovely.

I do mine thinly sliced with some cooked french beans, and I pour on a dressing made from olive oil, lemon juice, pine nuts and whatever herbs are to hand.
Mix well, leave in the fridge for a few hours and it's wonderful.  Really tastes of summer.

Lotty holder since Aug 09... I've FINALLY finished clearing it! On with the p.lanting  ....

Yep me too! In fact I had raw courgette sticks (along with raw carrot sticks and pepper sticks) today and yesterday for lunch - dipped in humous! Mind you, this is partly because I am on an enforced diet (doctors orders!) to try and bring my blood pressure down so that I don't have to take medication any more. Tis giving me 'orrible side effects!  :( Docs recommendation was to eat 10 portions of fruit and veg per day (less fruit than veg) instead of the normal 5 portions. Good job I have got plenty of veggie seeds under way then.  ;)

Raw courgettes are delicious. Have you never been tempted to try a bit when cutting them up to cook?

Good luck with the enforced diet, chris23005. That is one heck of a lot of fibre intake!

When my Penny dog comes to help me pick the courgettes, we always eat a few on the way round.  They are lovely and crispy when they are still quite small.

I always do that. Like the taste and texture.

As one of those crazy Yankees I can absolutely attest to how well young courgettes can be used in a light salad.

Thinly sliced courgette, thinly sliced onion, a touch of olive oil, sea salt and lemon. Heaven.

My mum can't eat cucumbers, so substitutes courgettes in her salads and loves them.

Jamie Oliver also has a number of recipes using them raw so they must be good  ;)

Lovely, but cut them as thin as you can. I use a spud peeler to make them into thin ribbons. Great in salads or put at the last moment into pasta with sour cream and a squeeze of lemon.

Well the recommended "5 portions a day" is apparently a minimum, not a target, so 10 portions is probably about right!

Still not sure I would want to stand downwind of someone eating ten portions a day

Love 'em raw. The only other way I like them is griddled, otherwise I wouldn't bother with them.

Cut in half lengwise, smear cut side with garlic (I use the puree from a tube) sprinkle with mixed herbs, season, top with grated cheese and bake (cheese side up!) for about 20 minutes until cheese melted and brown. Delish!

Last year I gave some courgettes to an old lady across the road together with that recipe and she said she thought it tasted amazing!

(Will be equally amazed if this thread stays in GYO for much longer!)
Sow your seeds, plant your plants. What's the difference? A couple of weeks or more when answering possible queries!
