Now's the time to make elderflower cordial

Tastes like summer!

You’ll need:

A kilo of sugar; a zested, sliced and diced lemon; citric acid or more lemon; 2 litres of hot water; sterile bottles; muslin; about 20 elderflower bracts, sorted for insects but not washed!

Dissolve the sugar in the boiled water, add the lemon, stir thoroughly, add the elderflowers.  

Cover with cloth, leave for 3-4 days in a cool place, stirring 2x daily.

Strain through the muslin.

Bottle and refrigerate, or freeze.

Will keep for about 6 months in the bottle, or ages in the freezer.  Lovely in summertime with fizzy or plain water as a cooling drink, or in winter with hot water.

my elderflowers have not appeared yet, and I've never made this but have offered my elderflowers to those that do. This year though I fancy making some for myself rather than keep buying it. Seems daft when I have a lotty hedge full to the brim with the stuff. Plus I'm a long way from the nearest road which makes the elderflowers just right for the job

Ta for the recipe, and I'm with you on the fizzy spring water with it.  Just the thing for a hot day. Wish it was  :D

Well now I am seeing lots of elderflowers so I plan to pick some and then make this... do you just leave the steeped flower heads etc. at room tem for 3 days? will that not be bacteria-ey??

I am very excited, made the mistake of googling  recipes, my head is bleeding now.. so many methods!!


So will call back when I have picked the flowers.. no brown bits right?!!

I made mine last night and will be bottling tonight.

20 elderflower heads
1.8 kilos sugar
1.2 litres water
2 lemons
75g citric acid

Stir sugar and water in pan and bring to boil.  Use spud peeler to peel strips of lemon and cut lemon in slices, discarding end bits.  When suger syrup is boiling, add elderflower heads, lemon peel and lemon slices, then stir in citric acid.  Cover with a cloth and leave 24th hours, then bottle.

Made this last year and it was delish!!

can I use cream of tartar insead of citric acid??? (I heard it was the same.. I don't have any, but do have everythign else!!!

ok so I got some cirtic acid from chemist, amdjhave made and bottled, it's very nice indeed, but not as tnagy as I hoped (or remember!) soooo, I know I should have tasted first then bottled Doh! but we live and learn... can I get some more CA and add it to the bottles? or do I need to pour it all out again? or do I just try another batch???
