I wondered if 3+ year old hens are ok to eat? I really can't afford to keep my eldest if she doesn't start laying in the Spring and it doesn't seem right to waste good meat! :(.

If she's a hybrid there's no meat on them.   She could live out the rest of her days living on your leftovers and grazing in the garden

From the other perspective:

Yes you can, however it would be a "broiler" no good for roasting as it would be pretty tough.

For a hot pot or stew it will be fine

Having tried it, hybrids are only any use for stock really.  Even a young hybrid cockerel only gave us enough meat for 1 meal for the 2 of us.

From what I understand, hybrids are not very good to eat. We be better off going to the store and buying meat there. I'm glad to see everyone pitching in and helping out in this conversation.
