Yum! I have a few recipes that use oil and they work well, I find.

Most modern margarines are very liquid, anyway, I find.

Well done MC.

Mary Berry has a chocolate cake which uses oil instead of butter with milk and golden syrup which is very good.

And a lot of American cake recipes use oil for the fat too.

Lot less additives than marg and no refrigeration.

Cake looks good what oil did you use and is it an ordinary type sponge?
did you decorate it . A friend said she made pastry with oil putting it all in a tupper ware box and shake it rapidly till it came together chill it and use as normal .

I used light olive oil and put the same weight in as butter an all in one sponge and dusted it with icing sugar.

My g/son is dairy-allergic and we use Vitalite in baking for him. It works well! Nice cake by the way!

I think its more of a dislike than an allergy,  i used vitalite years ago is it better on the fat count .
