Have had a lovely day pottering in the kitchen and decided to turn some bramley's and crab apples into apple butter. Found a recipe with a bit of chilli in it so decided to give it a go. In the end I get a bit bored with recipes and wing it and couldn't taste the chilli at all so bunged some cinnamom and cloves in. Filled all my jars with apple butter but still had a load left so cooked it down to apple cheese and just had a bit spread while still warm (scapings from the pan) and have just got the nicest little hint of warmth from the chillies.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Have you tried cooking Bramleys with a few raspberries ? Very good when cold.

I love apple butter on scones one of my most fave things.  Have to admit i've never made it though!  :lol:

Oh Kate, that sounds lovely!  I was homesick for apple butter last year and made a small batch for myself.  My husband thought it the strangest stuff! 
When I die I will slide in sideways, a glass of wine in one hand and chocolate in the other, screaming, "Whooo hooo!  What a ride!" as life is to be enjoyed to the fullest!

Over here real apple butter is strictly a mix of apples with apple juice to sweeten and boiled down until very thick, perhaps a hint of cinnamon added. Nothing else. Its SOOO good.
