Cutting Spinach Q?

I have sown some Spinach - bordeaux in drainpipe on the patio whilst be prepare the bed in the allotment.   The leaves are now about 2-3 inches long so I have plucked a few and they taste nice.

Packet says cut and leave 1" of plant to grow again, does this mean 1inch high so I can cut all the leaves from one plant?  (Only have first two leave and 2-4 other leaves at the mo.  Have read about picking outside leaves and picking whole plant? Confused blonde moment!

Often you can do that but personally I prefer to snap leaves off around the perimeter when the plant gets a bit larger. I don't take off all the leaves, just sort of 'graze' until I get enough off all the plants. The outer leaves tend to get very large and if left, they're not quite so nice, so this is the best solution.
