Pickled onions
« on: September 08, 2013, 11:12 »
Hi all though I would try a first batch of pickled onions, this year 50% or so of my onions were quite small so pickling them, the larger ones I have cut in half as I read some where to do that, I hav taken out of their over night brine bath and the cut ones look like thy will fall apart, will they stiffen up once bottled with vinegar? Have I spoilt them and done the wrong thing many thanks.

Easy peasy. 12 hours in brine, then peel and another 12 hours in brine,  peel and pop into spiced vinegar (with added chili)!

I think the ones you have cut in half will fall apart in the vinegar.  You can pickle quite large onions keep apart from the smaller ones and increase the brining times.

Cheers,   Tony.
I may be growing OLD, but I refuse to grow UP !
