Title: Calabrese question

I'm growing calabrese for the first time. The plants are still small (about 8" tall) and the  main 'bunch' (are they called florets?) at the centre of a couple of them is opening out, rather than staying tight (like you get at the supermarket).

Should I cut these off and and if so, will that encourage other bunches to grow?

Not sure what I'm doing with this stuff, so any advice welcome.

Cut them off and eat them before the flowers open.

You should then get side shoots form, so cut them off and eat them .... etc, etc.

Remember to feed and water them and they'll do you proud  :D
