4lb peeled bananas
1/2lb banana skins
1/4lb grape juice
1 lemon
1 orange
3lb sugar
1 gallon of water
yeast & nutrient
Amylozyme.

put bananas & fruit peel in a cloth bag tied up, boil with the water, simmer 1/2 hr, pour hot liquor over sugar and the fruit juice, when cool sqeeze bag to get the liquor out when liquor is at 21degrees add Amylozyme. 24 hrs later add yeast. cover closely. leave it in a warm place for a week, it will look like soap suds ! keep it well covered after a couple of months it will have a large amount of sediment, Siphon off add grape conc, fit an air lock, rack after 4 months leave for another 6 months before sampling it gets better with age .

Hope that helps

The recipe helped... the instructions sound scary!

I have demi johns, and a large pot to 'cook' the fruit (or whatever I am making wine with: Dandelions etc) and all the bits and bobs I need for my demi johns.

At least I can start thinking about wine making, I just remember my Mum making Banana wine and Dandelion wine years and years ago.

Hi, be prepared for some sludge but it's worth it, it's delicious.
