Last Years Parsnips

pulled out the last of last years nips last night, they were growing beautifully on top with lots of green.

There were also some beauties root wise.  I have put them on teh compost bin but was wondering i fthey would be ok to eat, I have heard that they can go woody?

Would they still pass muster for parsnip soup?

Incidently i used the method of making a V shape trend using a spade that i filled with a mix of compost and sand.

I would be surprised if they were not the best on the allotment site (Heavy clay for the most part)

peel them and see how woody they are. If you don't try you'll never know :)

yes. even if their cores are somewhat woodier than you'd have liked, simply cut out the core and use the rest of the flesh and you will a wonderful parsnip soup - or anything you want to use them for. Even the woodiest of parsnips will have a high proportion of decent flesh,
