Elephant Garlic

My last post was asking when they are ready to pull, but I have noticed over the last few days they have all grown seed tops, they have always been watered so not sure what is happening. Have I done something wrong or are the plants just dying off now, confused

Perfectly normal. Cut them off and use (including flower head) raw in salads or add to stir fries/other dishes as you'd use garlic and leave the plants to continue growing.

I am struggling with this elephant garlic stuff. I have maybe 20 plants spread round the garden. Planted last year probably October. They are all producing flower spikes but the bulbs look very small and they haven't formed into multiple bulbs?
Confused should I be waiting till next year to harvest? Should I remove the spikes either way. Also it's far to hot today.
