Muffin recipe wanted
« on: August 20, 2009, 20:35 »
I've lost the book that has my muffin recipe in.  Its a good basic recipe that has oil and milk in, not buttermilk but I just cant remember the recipe.  I works with what ever extras you put in, things like fruit and choc chips that sort of thing.  Anyone got one thats similar.
Thanks

Basic muffin
250g plain flour ..........for s/r flour use only 1 tsp baking powder.
3tsp(15ml) baking powder
1/2 tsp (2.5ml) salt
85g granulated sugar
1 egg
240ml milk
90ml corn oil or 85g melted butter/marge
Line or grease muffin tins..preheat oven gas 5/6
Stir all dry ingredients together in large bowl
In a separate bowl beat egg lightly, stir in milk and oil.
Pour liquids into flour mixture sir for about 20 seconds. Mix will be lumpy but you should have no dry flour visible
Fill muffin cups, 10-11 standard sized muffins. Bake fr 20-25 mins

variations: add 3oz choc chips, or add teaspn coffee powder and 2oz chopped walnuts, or a handful raisins/sultanas

I have  good recipes for banana and choc chip, and spiced apple as well if you want them :)

Right, finally got myself organised with recipes :) hope you can do Imperial measurements
Apple Spice Muffins
9oz plain flour                  (If using S/R flour use only 1 teaspn B/P)
3 teaspn baking powder
1/2 teaspn salt
1.5 teaspns mixed spice (or try cinnamon, 1/4tspn nutmeg & a pinch of ginger)
4oz granulated sugar
1 egg
5fl oz milk
3fl oz corn oil
6oz any type of apple, peeled cored and finely chopped.
Optional for crunchy topping...3 tablespoons soft brown sugar.

Gas 5 (190 - 200 'C)
Stir together dry ingredients. In another bowl, beat egg, stir in milk and oil and chopped apple.
Pour wet stuff into dry. Stir quickly until just combined. Mix will be thicker than usual but the apples release moisture as they cook.
Spoon into muffin cases....makes 10-12. Sprinkle with sugar if you fancy :)
Bake for 20 - 25 mins.

Banana and Chocolate Chip....soooooo yum....my fav

10 oz plain flour                  ( If using S/R flour omit B/P but do NOT omit bicarb)
1 teaspn baking powder
1 teaspn bicarbonate of soda
1/2 teaspn salt
3 large well ripened bananas (about a pound/450g in total..will yield 8-10 oz when peeled)
4 oz granulated sugar
1 beaten egg
3 fl oz corn oil (or 3oz melted butter or marge)
2 fl oz milk
3 oz milk or plain chocolate chips (or chopped up choc drops)

Preheat oven to temp as before
Mix dry ingredients in a large bowl
Mash bananas thoroughly with potato masher, add all the wet ingredients and then stir into dry stuff in large bowl, till just combined, add choc chips in last few strokes. Do not over mix.
Fill muffin cases...makes 11-12.
Bake for 20-25 mins

Hope you like them as much as i do
