I havent tried the leaves, but I do leave the stalks on to get crispy..they are yum! So I guess you could. I wouldnt hazard a guess on how to cook them though.  Ill leave that to the experienced cooks on here :-)

Washed off well, beet greens are excellent as salads, though you might need to acquire a taste for them.  Eaten with a bit of sour cream is quite delicious. You can also saute them as you would any greens; taste often until it's to your liking. You can also boil them in soups for extra flavour.

I've just thinned my Beets out. The leaves taste great. Supermarkets sell them in salad bags for loads.

we eat some of the beetroot leaves in our salad.  The leaves are a bit tougher/chewier than our lettuce but they taste good... ours have a very striong iron type taste.

Recommended for scrubbing your insides out clean, and cleansing the liver too.

Very closely. :D  Leaf beet is a nick name for chard.

Pompey Spud -  I hope you didn't throw away any of the beetroot you thinned out.

I thinned mine and replanted those I'd removed.  After a day or so of looking very sorry for themselves they're now looking great.  Even better, the few days set back has meant they're behind the original row's planting so I haven't got a glut forming but will have plenty of yummy beetroot over a longer period.

One of the old boys on our plot gave us some beetroot the other day when he was harvesting, cooked them - first time, and they were yummy, one son tried and liked them - hooray! Saw the old boy today, and thanked him again, saying we'd all enjoyed them, his reply - next time you're up, I'll show you where they are - help yourself! Shame we don't have anything to offer in return, other than thanks.
