I find some chilies to be offensive at the back of the throat and in taste in general, but my cayennes have just the right amount of bite and sweetness, they are just like the sweet bell peppers with a nice kick.

we are growing cayenne - never have grown anything before let alone chillies - so we'll let you know in a few weeks what we think

Peppers dont need be offensively hot.  

Try something like hot wax or cherry bomb stuffed with soft cheese and ham, honey glazed slowly roasted .... mmmmm  

You could try it with a cayenne but they may be too thin, they're far more versatile than just sticking in curry or chilli con carnie.
