gentle folk,
on the subject of preserving jars, we are about to pickle a lot of shallots for the first time. our lotment shallots have picked up what looks like a mildew, we thought we would pickle them.
do we need to sterilize the new jars before use? and how long should they be pickled before old hungry guts here can eat them?

Sterilize -yes.

Leave - I leave mine 6-8 weeks.

You've no doubt got a few alternative recipes there, but I drop a few peppercorns in mine for extra bite. You can also drop chillies etc. in with them.

Do not breath on anyone for at least 24 hrs after partaking.

Absolute minimum is 4 weeks.

Put some pureed garlic in the vinegar if you've any paint needs stripping.
