2lb runner beans (weighed after trimming and slicing)
1 1/2lb chopped onions
1 1/2 pints of malt vinegar
1 1/2oz corn flour
1 heaped tablespoon turmeric
8oz soft brown sugar
1lb demerara sugar
Salt

Put chopped onions into a pan with 10fl oz of the vinegar. Bring them up to simmering point and let them simmer for 20 mins or until soft

Cook the beans in boiling salted water for 5 mins then strain and add to the onions.

In a small bowl mix the corn flour, mustard and turmeric with a little vinegar to form a thick paste (must be smooth) add this paste to the onions and beans. Pour in the rest of the vinegar and simmer everything for 10 mins.

Now stir in both lots of sugar, stir until the dissolved, and watch for sticking. Keep boiling for about 30 may take longer just keep going until it thickens (Mine took nearly double that)

Pot while hot into warm sterile jars. Stand for a month before eating
