its now got to the stage that im going to have to pick my pumkin.
i havnt found a recipe i like yet and done want to waste it.
could i  cook it then freeze it?

yes . but its down to puree and mash .if you feeze it in lumps it turns to mush anayways .try cooking and or roasting first to save more :)

Cut it with a decent bit of stem on and put somewhere cool but not cold and you won`t have to decide until at least after Christmas and with care around March.

love the idea of roasted pumpkin never thought of that.
rest of it i will mash and freeze.

as for soup that is the one thing i can not make it always ends up as stews :lol:
not bad for a girl who did two years at catering collage is it :lol:  :lol:

It also freezes well simply cut into cubes ,it roasts nicley from frozen too.

My mum makes pumpkin and dried apricots jam. It's fantastic!

Well LMM, I'm coming from a place near a village which has been living from growing winter squash for almost a century now, they hold an annual festival in autumn and now published a recipe booklet of the varied things they do cook.
From jam through drinking juice to main meals, etc. Bound to be something there, that takes your fancy.

Most commonly eaten as roast, which comes out as a mash easily, as pot substitute, seasoned, frequently flavoured with garlic, rosemary, nutmeg and served with dark meat, especially game. Or used for stuffing with turkey, bit like chestnust. Looong, long list.

chop and fry a couple of leeks with a couple cloves of garlic, just as they go a bit soft add some cubed pumpkin ,a handfull of sultanas and a t/spoon of cinnamon,fry for another 10 mins by this time the pumpkin will be cooked,salt n pep to taste  and serve with a fine glass of white wine :wink:
