PurplePixie's Yummy Chutney recipes

PurplePixie sent me this recipe last year, sadly I didn't get to try it as our tomato crop didn't happen. Hopefully, I'll get to try it out this year. :)



Chillied Tomato & Garlic Chutney
Makes 5 x 400g 13 oz jars

prep time 30 mins
cooking time 6-8 hours

1 kg (2lb) tomatoes, skinned roughly chopped
1 large onion chopped
2 cooking apples, about 500g (1 lb) peeled, cored and chopped
2 red peppers, halved cored and diced
75g (3oz) sultanas
100ml (3 ˝ floz) distilled malt vinegar
250g (8oz) granulated sugar
2-3 large mild red chillis halved, deseeded finely chopped
6-8 garlic cloves, finely chopped
1 cinnamon stick halved
˝ teaspoon ground allspice
1 teaspoon salt
pepper

1, preheat slow cooker, put all ingredients in , mix, cover with lid, cook on HIGH for 6-8 hours until thick and pulpy.
2, warm 5 clean jars in the bottom of a low oven, spoon chutney in and place a waxed disc on top and leave to cool, seal each jar with a screw topped lid and label. Store in a cool place for up to 2 months. Once open store in the fridge.

Let me know if you try it, these slow cooker recipes are my kind of cooking .... bung it in and leave it for hours!  :D
