HELP.... Storage of Onions + other home grown veg

Hi,

I'm new to all of this GYO and this year I have started out with a few "easy" veg. I'm sure a lot of it is ready for the plate, and I was jut wondering if there was a way to store it so I can start with something else for Christmas?
I've managed to grow:
 
Carrots  8)
Onions  ::)
Beans (French + runner)  :D
Peas  ;)
and leeks - although don't think these are ready yet.   :blink:

Is the best way for the beans + peas to blanch and then freeze?
What about the Onions + carrots?

Beans and peas should certainly be blanched and frozen.

Carrots can be lifted and stored in dry sand/compost/peat but I would leave them a while longer as they will still be growing, though you can certainly start eating the biggest ones.  I leave mine in the ground all winter.  Leeks are normally left where they are all winter, though I have lifted them and heeled them in (dig a trench, pile them in the right way up and cover the roots with soil) in late winter to free up the ground.

What are you thinking of planting now?  There is not a lot  that you can still plant that will be ready by Christmas so I would think it would be better to leave your leeks and carrots where they are and save yourself some work.

There is lots elsewhere on the forum about lifting and storing onions.

You could peel and chop/dice your onions and freeze them (no need to blanch) in usable sized portions.

Ah thanks guy's, I was hoping you'd say leave em where they are ha ha! I will free up the peas / beans though and freeze.

I wasn't sure what to replant to be honest, I was going to see if Parsnips would do? But I fear they should have been planted with the carrots?  :wub:

Maybe some sort of winter lettuce?

I string onions up when they are dry  :D
