help please needed re cream in soup

just making soup for Christmas day (only time to do it!!) its pumpkin soup and i add cream at the end, in order to freeze it for the big day do i leave out the cream or add it in? does cream in soup freeze well, as i dont want a disaster on Christmas day!

I always reheat soup and stir in cream just before serving have never tried freezing with it in. So don't know if you can just that i personally don't
if that makes sense......................

Cream in a soup will easily freeze and come back exactly as you put it in.  Only thing you can't do with previously frozen cream is whip it.

I've done it both ways for freezing. Tend to freeze generally without the cream so it is more condensed and takes less room and then add when I take it out. Never had a problem with freezing it either way though.

I would also question whether you need to freeze it if you're using it on Thursday? As long as the cream is in (and remains in) date, I wouldn't bother - just keep it in the fridge.

Hi Val H, thanks for the messages, i made it last night, so do you think it will be ok in the fridge then ith the cream already in it? i dont fancy giving anyone food poisoning for Christmas! :lol:

Should be fine as long as the cream's use by date was after the 25th. Just seemed a waste of time freezing it and then having to take it back out again tomorrow evening in order for it to de-frost overnight in the fridge!
