Broad beans

First time this year. Looks like I could get 3 crops a year from same location. Excellent.
But first crop didn't skin the beans before freezing.
So is it best to poor boiling water over leave for minute or two to peal of the green skin before freezing.
Same again if drying.
Anyone dried broad beans before? What effect on flavour if any.
Freezer getting very full at the moment so would like an option to dry.

I'll be watching your post for answers and tips, this is my first year trying to grow broad beans here.  Rumor has it that it can be quite difficult in Georgia.
Gardening is what I'm doing when I don't know what I'm doing.
