just waded through the search facility but the results are a bit vague lol

'mushroom' brings up every post that mushrooms ever done which isnt helping my quest for mushroom soup ideas lol

anyone got any good suggestions???

have got shitake, oyster, button and chestnuts, onion, cream, stock, and looking for a little inspiration from any budding delia's or jamies out there  :D

Edit: Nothing on here.  I make mine without a recipe so I'll google to see if I find anything close.

i did wade through a fair bit before i came to that conclusion myself lol  :?

cheers for that Mr W.G i fancy it with cream myself but if you say its right enough with the milk instead then i shall bear that in mind for next time and i might just do one another night to taste the difference anyway  :)

the way i see it is, if you add vegetables to whatever it is your making then the good things (the veg) negates the bad things (the cream) therefore making it virtually fat free lol  :D

 i love my twisted sense of reality lol

Cream of Mushroom Soup

500g (1lb) fresh mushrooms
1 tabsp chopped parsley
seasoning
25g (1oz) plain flour
25g (1oz) butter
500ml (1pt) chicken stock
500ml (1pt) milk
1 tabsp lemon juice
2 tabsp whipping cream
parsley to garnish

Method
· Melt the butter in a large saucepan and the mushrooms and saute until soft.
· Add the flour and cook for 1 minute slowly blend in the stock, bring to the boil. Season lightly, and simmer for 10 minutes ,
· Remove from the heat blend and stir in lemon juice and cream. Serve garnished with parsley.

Serves 4 - 6

SERVES 6

This is a good way of making a relatively small number of wild and dried mushrooms go a long way. It is a very rich soup and you won't need huge quantities of it.
 
25g/1oz dried mushrooms
175ml/7fl oz hot water for soaking dried mushrooms
50g/2oz butter or margarine
150g/6oz onions, peeled and diced
4 cloves garlic, crushed
25g/1oz shitake mushrooms
2.5ml/ ½tsp grain mustard
75g/3oz mixed wild mushrooms
100ml/4fl oz port
1 litre/2 pints rich vegetable stock
250ml/10fl oz double cream
salt and freshly ground black pepper

Soak the dried mushrooms in hot water for 30 minutes until reconstituted and set aside. Retain the soaking liquid.

Place the butter in a saucepan and melt over a gentle heat. Add the diced onion and sauté with the garlic until brown.

Add the sliced shitake mushrooms and sauté for a further 5-6 minutes.

Now add the washed and trimmed wild mushrooms and sauté again, stirring regularly, for another 3-4 minutes.

Next, add the dried mushrooms and pour in the liquid they have been soaking in, using a piece of muslin to catch any remaining grit.

Add half the port and continue to cook, adding some of the stock and allowing it to reduce by about a half.

Then blend the soup in an electric blender until smooth and return to the pan.

Now add the double cream and bring gently to the boil. Add the remaining port and continue to simmer for a couple of minutes.

Finally pour in the remaining stock, add the mustard, adjust the seasoning, stir well and serve.

You can buy dried mushrooms or dry them yourself, it doesn't matter.

just finished my mushroom soup and if i dont mind sayin so meself  . . . . .
its damned tasty  :D  tried the first one i found but i will have a go at both WG's and masha's in turn as they both sound just as nice

its just gone in the fridge (yes i do have a habit of trying recipes late at night lol)

not even added the cream yet and its spot on but will do for the sake of following the recipe  and trying it out.

Old post revived - but my son wanted me to make mushroom soup as he had tried it at the (4star) hotel he works.  So I searched the site and ended up making Sorrel's recipe and what a success!  Whole family loved it.  Thanks Sorrel.
