Hi all

i am about to venture away from Kits and onto my own wines. I have a question!!!

What do you do the primary fermentations in? A large fermentation bin??

Also, in all recipe's i have seen it says to cover the primary. What do you cover it with? Do you add an air lock at this point?

If making a demijohn then suggest a bucket.
Preferably clean, even better new - Wicks @99p.
I simply cover with a teatowel.

If making larger amounts then get a larger item from a home brew shop, think they are 5 gallon capacity.

Again try a teatowel or similar over the top.

So far so good with this approach, 2 gallon of blackberry bubbling away.

Reread the original, primary fermentation to me is:

Place fruit, sugar, and hot water in bucket, stir to dissolve the sugar.
Add water to make up to a gallon, hopefully still slightly warm.
Crush/squeeze fruit by hand if wanted.
Add acid, nutrients, tanin and whatever else you decide on. (None in my case usually).
Dissolve a couple of teaspoons of sugar in some warm water in a small container and then add the yeast.
Allow yeast to bubble up.
Put yeast mixture in the fruit/sugar mix in the bucket.
Cover bucket, stir daily for about a week.

End of primary fermentation bit.

Demijohn bit next (secondary fermentation??):
Strain the fermented mix and transfer to a demijohn, add airlock.
Easier to strain into a demijohn with a sieve and funnel in one go.
Yeast and general gunk will settle to the bottom after a time and wine gets clearer.
Should bubble away for a while, say 4 weeks but possibly longer.
I add some sugar during this time (if necessary) so if you do the same leave some space at the top of the demijohn.

Tended to simply use a plastic sieve, cheap kitchen type thing. All I want is to get the big bits out. The finer stuff I find settles in the demijohn, say 1/4 inch at the base.

Tried a muslin once or twice and I find that it clogs up and takes ages to get the liquid through. So aboandoned that idea.
