Am making strawberry jam tonight and luckly my wife has come home with a thermometer for me  .

Does anybody know what the correct temperture i need to reach for my jam to set? is it that easy ?

Or should i still stick to the cold plate method?

I have never failed using the saucer technique, but I found this for you:

Some people have sugar thermometers and if you have one you need to wait until the temperature reaches 105ºC (221ºF).

If you still have strawberries in a few weeks you can add recurrant juice and get a much better set.
