Slow cooker lamb joint
« on: December 13, 2009, 08:53 »
I have a small 1kg lamb shoulder shank side joint to cook - has anyone done this in the slow cooker? Was thinking of putting it on a bed of leeks & carrots with a bit of red wine & rosemary.
How long d'you think I should cook it for ?

My slow cooker book says:

1. prick the shanks all over with a sharp knife
2. suggests pre-marinade with stuff like onion, garlic, thyme, rosemary, paprika, balsamic vinegar & 2tbsp oil - but not compulsory
3. lightly brown shanks in oil
4. put into slow cooker with salt and pepper
5. add marinade (i.e. whatever ingredients you want to use) wine and lamb or veg stock to frying pan, bring almost to boil, stirring, then pour over shanks]
6. switch slow cooker to high or auto, cook for 1 hour then leave on auto or reduce to low, and cook for a further 6-8 hours, or until very tender, turning halfway through (the meat, not you!)
7. remove shanks, skim off any fat from cooking juices, check seasoning and serve.

This recipe is for 4 shanks but I'd have thought it would apply irrespective of a smaller portion.

Enjoy!
I try to take one day at a time, but sometimes several days all attack me at once...

Hope they were yummy Janey -- we love lamb shanks and have them quite often. As I don;t have a slow cooker I cooke them on low in the oven and they take about 6-7hrs to be melting soft  :)
Favourite is rubeed over with powdered ginger, sat on some rosemary twigs, drizzled with honey and then cider poured over YUM

It was yummy, thanks, i didn't brown them first, just turned them over half way so both sides got coloured in the wine. Didn't eat the veggies cooked with them as they were fairly fatty, so feeling saintly - it won't last
