I have the River Cottage Handbook Booze which is pretty good. It covers beer, infused spirits and other stuff as well, but goes through the basic techniques, equipment and ingredients for wine pretty clearly. There are a decent amount of recipes and probably enough information to let you move on to other variants with confidence
My only other wine making book is a very old and now unobtainable one bought in a charity shop years ago, so is not much help as a recommendation
