Blanching Vegetables

Hi, I am starting to freeze the excess from the plot. :D

The method I have used so far is blanching in boiling water, a friend has told me that you can blanch Veg for the freezer by steaming them. Is this correct? only we have a streamer and it would be far easier for me to blanch the Veg by steaming.

Any advice will be gratefully received.

Hi fatbelly,
It is possible to do it (we do it all the time at work) but make sure you don't piled them up to much in the steamer tray as they won't cook evenly. just a thin layer will be ok, then put them straight in icy water when they are cooked to stop them cooking any further.

I've started to freeze my excess green beans & runner beans as well.Wish I could do the same with courgettes :D

Do you know, are the timings for steaming the same as they are for boiling water? 

It would be so much easier for small quantities and will probably keep the vitamins in better too.

I would say a minute or two. I normally throw mine in boiling water & leave them in until they turn a darker shade of greem but not grey as that's whent hey are over cooked.

Like I said a minute or two. It doesn't matter much if they are under cooked as you'll finish them when you have them for dinner later on in the year.

I have just finished blanching my first batch of french beans this year..  put them in boiling water and kept the heat on for 3 minutes, seived them and plunged into icy water immediately.   They look just fine, proof of the pudding and all that, but judging by the colour I am very pleased with the result :D   They are now safely tucked up in the freezer :D :D
