I have just received your new book, thanks for the quick delivery!! & boy was I pleased to see a horseradish recipe!!
One thing..... ( & sorry if I missed it...).....how much horseradish root do I use?
You only mention to dig up a piece & grate it..........
I am sooo excited at trying it ( & alot of the chutneys!!)

The recipe is how to make up the preservative liquid. If you have dug up an awful lot of root, you may need to make another batch. Until you get your spade into the ground, you've no idea how much you're going to dig up.
