Title: Elderberry ideas?

Sorry,another question.

My local farmer is chopping down lots of elderbush,in the next couple of weeks and has asked me if i want to pick the berries.

Any ideas as what i can make with them?
Would be a shame to waste them .

Only 3 things spring to mind:
1.   Wine
2.   More wine and
3.   Even more wine!!!

 :lol:  :lol:

You can also make elderberry cordial I think and jam or jelly, but I've only ever made them into wine!

But they are not ripe yet surely???
