Baked fennel with sd toms and goats cheese

4 fennel bulbs
10z butter
tbsp chopped parsley
juice of 1 lemon
4tbsps water
1 onion finely diced
6 whole sun dried tomatoes, soaked in boiling water for 10 mins if using dried
1oz pinenuts
5oz goats milk cheese log

1.Preheat oven to 180C gas 4.  Cut fennel bulbs in half, removing some of the denser core
2.Put in oven dish cut side up.  Melt butter in a saucepanand add parsley and lemon juice.  Pour over the fennel, add water and cover tightly with lid or foil.  Bake for 1 hour or until cooked.
3.Heat oil in a small saucepan and cook onion until soft.  Slice tomatoes finely and mix with the pinenuts, cheese and onion.
4.Remove fennel from oven and set to gas mark 6.  Pile cheese mixture on top and return to oven for 15 to 20 minutes.

Sounds D-licious  :D   Can't wait to try it!!  This will be my first year to try growing fennel  :roll:  Got any tips?

Question: is the quantity for the butter 10 oz. or 1 oz :?

I like seeing recipes for less common veg's, as it gives reason for trying new types :wink:

Oops.  Make that 1oz of butter for the healthy option, or 10oz for the new heart attack diet.  Sorry, typo.
