Title: Redcurrant "dark" rum, how to make?
Post by: WeavingGryphon on May 05, 2020, 11:09
Has anyone put redcurrants in rum and does it make a difference if it's a "dark" rum?
I have 700mls of rum I got given when someone moved away and thought I'd liven it up so someone (Husband and friends) may drink it.

Modify, I also have some raspberries and lots of wine. Can you infuse wine?

Modify again, I also have blackberries and rosehips.
Thanks.

I have a recipe for red currant shrub. It is an old fashioned drink and you can also use lemon or orange juice.  It comes out like a liqueur for sipping. It is also very good for using in puds.

Cook fruit and strain as if for jelly. You need 300ml.
Mix with 600ml rum or brandy, grated zest from 1 orange and 1tsp grated nutmeg.
Seal in a jar for 7-10 days. Don’t worry if the juice and alcohol form a gel as this will get sorted later.
After steeping, heat very gently in a pan with 300g sugar. You just want to melt the sugar, not boil the alcohol off.
Bottle and mature for a few months.

We ended up putting it into jam jars with sugar after two days. There was a lot on the news about people getting alcohol problems, and the kids kept seeing wine bottles in the park so we used this as a lesson about alcohol and the addictive effects it has on you if you don't moderate. You have to down 2/3 bottles of wine in one go and hide it from your family. A little is okay.

Husband has tried a bit and says it's lovely.
