Cheesy Fish Pie.

I got this recipe out of a nice little book that I bought a while a go.

" The Best of British Fish " which was compiled in support of 'The Royal National Mission to Deep Sea Fisherman'

You need :-

450g Pieces of whitefish, skinnedand boned. ( I've bought half whiting and half haddock )
570ml full-fat milk.
50g of marg or butter
2 tbsp of plain flour
salt and pepper
pinch of mustard powder
125g strong Cheddar cheese grated
2 large potatoes (675g) cooked and mashed with butter and milk
2 hardboiled eggs sliced
2 tomatoes, sliced

1) Get the oven upto 150C / 300F/gas mark 2. Cook the fish by poaching it in the milk until just translucent. Take the fish out of the milk.

2) Make the cheese sauce by melting the marg and stirring in the flour for a couple of minutes over a low heat to make the roux. Heat the fish from the fish poaching until just below the boil and whisk it gradually into the roux. Season with the salt and the pepper and a pinch of mustard powder. Stir in a 100g of the grated cheese.

3) Flake the cooked fish into the cheese sauce. In a greased ovenproof dish, layer up the pie as follows: a small amount of potato ; half the fish in cheese sauce; the sliced hardboiled eggs; the sliced tomatoes; the other half of the fish in cheese sauce; the rest of the potato. Scatter the remaining grated cheese on the top and put in the oven for 30 mins until golden.

This was literally the first time that I've ever bought wet fish from a shop as I usually catch my own.    I'll let you know what sort of reception this gets with the family. Its supposed to be enough for four or five people.

Sounds lovely.  Our continental cousins turn their snooty noses up at mixing cheese and fish.  But they don't know what they are missing. :lol:

Made up my own version of fish pie (without the cheese). It is always a great hit with everyone.  About the only time we get empty plates all round!

2 organic salmon steaks
2 fillets of haddock
milk to poach in
parsley
black pepper
cooked prawns
potatoes
sweetcorn
peas
broccoli or spinach
a carrot
1/2 an onion
2 bay leaves#

poach the fish in the milk with 1/2 the onion, 2 bay leaves, parsley and black pepper.

at the same time cook the veg seperately.  

Just before 20 mins add the prawns to the fish to warm through

Once cooked, remove fish, and thicken sauce with a tablespoon of plain flour (like you do with custard)

Add fish, veg, and sauce to casserole dish, top with mashed potato and put in oven for 10 minutes or so, until mash is crispy on top.

IMO it can't be beaten!
On the very steep learning curve of organic veg growing!!!!

Makes me hungry just thinking about it!

Forgot to add though that you need to take the onion and bay leaves out before you make the sauce, and add more parsley if need be!
