I've read that you do the same with Shallots as you do with Onions and wait until the foliage falls over.  My Shallots have fallen over but some of the stems are still green so do I still harvest them now and then dry out? Also I read somewhere that it is best to leave in the ground for a week once they've toppled over. Why is this? My red onions have also fallen over but all the stems are completely green and don't know if the heavy rain may have done this? Are these ready to harvest. Sorry for silly questions but I don't want to pull them too early.

falling over stems may be weather damage if they are still green. I'd wait until the stems start drying out a bit as well.

With shallots the leaves often stay green although the stem is soft and has fallen over. Lift them and allow them to dry for a few days. I usually then pull off the tops to leave about 3 inches of stem.
