Elderberries

I've just bottled some Elderberry liquer and have the left over boozy fruit. It seems such a waste to dispose of it. Does anyone think I might be able to make jam from it? Welcome any other suggestions.
By the way...the liquer is absolutely delicious :D

Elderberries are low in pectin to begin with which doesn't make it easy to make a jam. However, if you use jam sugar or have some bottled or dried pectin at hand, I don't see why not. Give it a go.

The fruit left over from our efforts ever year gets stored in the fridge in a smallish screw top jar (lasts OK because it is preserved in alcohol) and stirred inot yummy things like custard, or added to apples for a crumble etc throughout the winter.

Tried adding to a cake mix, but needed to adjust the liquid as it made it rather wet... silly, should have though ahead I know  :ohmy:

Never thought of jam -- thanks, Val I could try that too  :D

Elderberry jam, lovely! Used to get that at home when I was growing up. :)

do you think it could work with an equal quantity of apples maybe.  You would have the pectin and it would bulk out the elderberries
