edible weeds
« on: April 01, 2011, 19:36 »
Having read some books about foraging and wild foods I was surprised to find that two of the 'weeds' that I hated were edible. These were hairy bitter cress and corn salad (TO THINK THAT IV'E BEEN ACTUALLY SOWING CORN SALAD  ::)).The hairy bitter cress is really lovely in a salad with a slightly peppery aftertaste.I'm not encouraging people to let the plot go to rack and ruin BUT if it's growing on the plot why waste it.
I wonder if you planted a plot of bittercress some pescky veg plants would grow among them :D

fat hen is edible as well, and sorrel and chickweed  :)

I have ground elder but I'd rather not have enough of it to pick to eat

I've long considered a career in trading 'Couch Grass Futures'...

Someone here suggested eating the shoots, which is perhaps not as mad as it seems!

Try some year-old rocket, just going to seed. It's sharp, bitter, and marvellous with a severe chopping and a dollop of salad cream with garlic! (yeah, I know it's not a weed, but it tastes damn perfick!)

Apparently, the young leaves of Dandelion are actually sold as part of 'salad' in Europe and I also read that the roots can be roasted and ground like coffee.  And there's nettle tea and soup ..... although I'm afraid I haven't tried any of these :D

I just tried Alexanders (horse parsley) the other day for the first time, and very nice it was too. Lovely big stems that you can prepare a bit like asparagus, I will definitely be using it again. :)

And don't get me started about nettle tempura!

I'm sowing burdock for the roots and maybe peeled stems!

Wood sorrel is also edible.  It does contain oxalic acid, which may harm anyone with abnormal kidney function or children if eaten in large amounts.

Burdock and dandelion roots make a good beer (or a refreshing drink if made in weaker form).

Land Cress pops up every year on my plot.  Rather  like water cress but a little tougher. Great shredded in an egg butty.

I've made nettle soup for quite a few years now at this time of the year and is really nice.It contains a lot of the vitamins and minerals that you need to give your system a boost after a long winter.

Any chance you could let me know the recipe - I saw it once on Ray Mears but I'm a bit apprehensive for obvious reasons :D

Ground elder tastes like a mild parsley and has a nice texture when lightly fried in butter. Found quite a few recipes.....vanilla and ground elder muffin anyone?

Rather like the idea of nettle tempura Missmenace!

I'm still trying to work out what a pound of rocket, all mashed up in a pestle and mortar, is called as well...

I've got to use the damn stuff up somehow!
