pumpkin pie recipe

for the pastry - 7 oz flour; pinch salt, 3+1/2 oz marge and water

3 eggs, seperated
1 lb fresh pumpkin flesh, steamed for 15-20 mins then pureed
8 fl oz evaporated milk
8 oz sugar
1 tsp cinnamon
1/4 level tsp salt
1/2 tsp ground ginger
1/4 tsp grated nutmeg

make pastry then roll and line a 9'' pie dish and bake blind for 15 mins

whisk egg whites til peaky
in another bowl (use the same beaters) lightly beat egg yolks, cooled pumpkin, milk, sugar, spices and salt til well blended
gently fold in egg whites with a wire whisk or metal spoon
pour this into the pie dish and bake for 45 mins at gas mark 5 -- until a cold knife inserted comes out clean

serve hot or cold --- YUMMY 8)

if you have too much filling for the tin put it in a pyrex dish and bake it.

apologies for only using imperial measurements - it's an old recipe...

that's the first pumpkin pie recipe I've seen that uses pumpkin as a main ingredient, normally is just seems to be used as a filler.

Must say I'm not a fan of the taste, a bit like marrow, pads out a meal to make you feel full.

If a good pumpkin is fully ripe, it has got very nice, sweet flavour, Sally. :)

Must admit I'm feeling a bit left out having not grown them this year (grown them ever in fact) so may put a wanted on the swap site for half a dozen seeds next year and I will appraoch the subject of taste with an open mind.

Just looking at doing a pumpkin pie as I acquired a pumpkin when I took the boys to pick a pumpkin for halloween!  Can you prepare the pumpkin and then freeze it to make a pie at a later date?

Going to try toasting the seeds too!

yeah, if you steam the chopped flesh and then puree it it's fine though it does loose its flavour if you keep it for too long.

i usually get enough flesh for at least two pies from a pumpkin and always freeze one lot
