well just for a trial, the wife did some baking, to a carrot cake recipe - beetroot cake. tastewise not too bad, a little sweeter than carrot cake if I had to say - but well worth the trial.

Sounds good.:) I'm surprised its not redder than that though.... I understand beetroot makes a good addition to chocolate cake too. :)

the mixture looked a lot redder though, just cooked back to more normal colours.

I bet it's lovely!
I made Hugh F-W's choc beetroot cake and it's absolutely lush. It uses expensive choc but it's worth it :)

I keep meaning to try the chocolate version... I had great success with courgette cake last year. Even managed to serve it to a 5yr old without him noticing :tongue2: Would you make it again?

yes I think we will - mind you we made 4 cakes worth this time.

Yellow courgettes are easier to lose in buns and cakes ;)

There's a fabulous recipe for beetroot cake on this site, everyone I've made if for thinks it's delicious it's so moist and tastes quite fruity iced with cream cheese frosting.
