I was thinking about making some chicken poo tea by dunking it in a container of water.
Would this be a good thing to put on onions and garlic?
Is there anything else it would be good for?

I throw mine direct on the comfrey patch with no problems. As for the tea yeah why not as long as you remember to wash your produce before eating. Try a small patch for a few weeks and watch for any positive negative results.

You could just scatter the pellets onto your garlic/onion bed and the rain - if we ever get any will slowly dissolve it over time. This way they get a slower dose rather than a quick burst. By dissolving it first you will deliver a large amount of nutrient in one go. If they are looking sorry for themselves this may help.

you are right - it will.   Word of warning make sure you dilute it 5:1 before using its as a foliar feed, otherwise you will scorch the leaves.
