Pickling vinegar

Hi

Any advice please.

Last year I picked some beetroot.  The beetroot itself was lovely and sweet to taste.  But when I picked it it was lovely but tart/bitter to taste.  I used Sarsons pickling vinegar.

Can anybody recommend an alternative or what I can do to end up with a sweeter tasting beetroot?

I used Sarsons to pickle some beetroot and it was very tart at first.  It developed a much smoother, sweeter taste after a few months.
Cheese makes everything better.

True pickling vinegar is a 7% solution. Regular vinegar is 5% and will work just as well with less acidity. I never use the 7% as it's too acidic for me.

I'd make my own spiced vinegar using this recipe http://www.allotment-garden.org/recipe/157/quick-spiced-vinegar-recipe/ with red or white wine vinegar.

Same as Val -- I use white wine vinegar with whaever spices we fancy added  :D
