Rhubarb recipes

Done the rhubarb crumble
rhubarb fool
rhubarb upside down cake
rhubarb and ginger jam
rhubarb chutney

What else can we do with it?

A bold thought?  Rhubarb is a vegetable right?  How would it be in say, a Stir Fry?
Playing all the right notes but not necessarily in the right order!

I haven't tried it, so can't say how it tastes. I usually just use it as a sweet here.

Armenian Apricot Soup
Ingredients
3 cups red lentils rinsed
1 tablespoon cumin ground
3 carrots peeled and chopped
2 onions diced
1 tablespoon extra virgin olive oil
10 cups water
12 ounces apricots dried, chopped
as needed salt
Method
Heat the oil in your soup pot over medium heat, then stir in the onions and carrots. Saute for about 10 minutes.
Add the cumin and stir well. Decrease the heat, cover, and let the vegetables sweat for ten minutes.
Add the lentils and pour in enough of the water to cover. Bring to a simmer, then reduce the heat to medium low and cook for twenty minutes, or until the lentils and carrots are tender.
Add more of the water as needed as the lentils soften and expand.
Remove from the heat, stir in the apricots and any remaining water, and season with salt.
Use an immersion blender to puree until smooth; alternatively working in batches, puree in a regular blender until smooth.
Take care not to over salt this soup. The right amount will bring out the flavor of the apricots but leave the onions in the background.
Serve hot.

I have an American recipe for a quick and easy Rhubarb Jam.
5 cups of Rhubarb, cut in small pieces
3 cups granulated sugar
1 box of Strawberry gelatin
(If you don't have an American measuring cup I would use a coffee mug)
Mix the Rhubarb and sugar in a glass or plastic bowl with a cover. Set it in the refrigerator overnight. The next day, cook for 10 to 15 minutes, until tender. Then add one box of strawberry gelatin. Place in jars in the refrigerator.

Another American Recipe.... :)
Rhubarb Custard Pie
(Bake at 400F/200C for 45 minutes, 6 servings)
Ingredients:
1 double pie crust (Short pastry)
3 eggs
3 Tablespoons Milk
1 3/4 cup sugar (350 grams)
4 Tablespoons flour
1/4 teaspoon ground cinnamon (I always add more)
1 teaspoon vanilla essence or extract
2 pounds fresh rhubarb, cut in 1-inch lengths (4 cups/again I would use a coffee mug)
2 Tablespoons butter
Milk and sugar(granulated)
Beat eggs, milk, sugar, flour cinnamon, and vanilla, in a  large bowl, just until well-blended. Stir in rhubarb.
Roll our half the pastry to fit a 9-inch pie plate(dish/tin/etc). Spoon in the filling, and dab with butter. Roll out the remaining pastry and cut into 1/2 inch strips. Weave strips over filling for a lattice top. Crimp the edges together. ( I usually brush a little water or milk between the pastry to help it stick together.) You will want to make sure it is a stand up type of crimp. :) Brush the top with milk and sprinkle with the sugar. Bake in a hot oven(400F/200C) for about 45 minutes or until the pastry is golden and the filling is set. :)

Jamie Oliver has a recipe for using rhubarb in a sticky sweet and sour sauce for roasted pork belly.  I haven't tried it (I haven't got enough rhubarb yet to get bored of crumble) but it certainly looks interesting - might be worth seeing if you can track down the recipe, or something similar.  If it's good, report back so I can try it!

And yet another American recipe. Similar to crumble or more like a betty.
Rhubarb Crisp
1 cup flour(130 grams)
1 teaspoon cinnamon
3/4 cup oatmeal (porridge oats)(about 75 grams)
1 cup Brown sugar(200 grams)
1/2 cup melted butter(115 grams)
4 cups diced rhubarb(again use a coffee mug)
1 cup sugar(200 grams granulated)
1 teaspoon vanilla(extract)
2 Tablespoons cornstartch(cornflour)
1 cup water(250 ml)
Combine flour, cinnamon, oats and brown sugar in a bowl. Add melted butter and mix. Press half the crumb mixture into a greased 9inch square baking dish. Cover the crumb crust with the diced rhubarb. Combine the remaining ingredinets in a pan and cook until thick. Pour sauce over the Rhubarb and top with the remaining crumb mixture. Bake for 1 hour at 350 F or 180 C.

Another American Pie recipe
Rhubarb Custard Pie

3 Tablespoons frozen orange juice concentrate(I haven't found the equivalent here. I would just use orange juice and the zest from an orange)
2 Tablespoons butter or margarine, softened
3 cups diced rhubarb (again use a coffee mug)
3 egg whites
1/3 cup sugar(about 66 grams granulated)
one 9 inch unbaked pastry shell (short crust pastry for just the bottom of the pie plate)
1/3 cup chopped pecans I would say a good hand full of nuts chopped.
Combine the 1 cup sugar(200grams) with the flour and 1/4 teaspoon salt. Add egg yolks, juice and butter, beat with an electric mixer until smooth. Stir in rhubarb. Next in a clean glass bowl beat the egg whites to soft peaks. Gradually add the 1/3(66grams)granulated sugar, beating to stiff peak stage. Gently fold the white mixture into the rhubarb mixture. Pour into a pastry lined pie plate and then sprinkle with the nuts. Bake at 325F or 175 to 180 C  preheated oven for 55 minutes. Garnish with whipped cream if desired. :)

Thanks everyone for all the suggestions - will be trying some this weekend although don't think it will be the Armenian apricot soup - no rhubarb!!!!

If you like sweet-and-sour accompaniments to meat, a little bit of rhubarb sauce makes a change from apple sauce.

IMO Gooseberry Sauce is better - perhaps we can start on the Gooseberry recipes in a couple of weeks, mine are nearly ready
