Apple Flapjacks (for Mosslane)

Apple Flapjacks

Recipe published in BTCV "Grow Your Own Food Guide"

2 x Bramley apples, peeled and cored
Juice of 1/2 lemon
150 g butter
85 g brown sugar
85 g black treacle or golden syrup
225 g rolled oats
1/2 tsp cinnamon
pinch salt

Heat oven to 190 C/375 F/gas 6.

Slice the apples and add to a pan with the lemon juice and one tbsp water. Bring to a simmer and cook until the apples are softened, then mash with a fork (to leave some texture) and set aside.

Melt the butter, sugar and syrup/treacle gently in a pan. Add the oats and salt and combine thoroughly.

In an 8 inch/20 cm sandwich tin, put half the oat mixture in the bottom and flatten down well. Add the apple mixture on top then the remainder of the oat mixture and flatten down.

Cook in the oven for 25 minutes or until golden brown. Mark slices whilst still warm, then cool before removing from the tin.

Flapjacks are a fave of mine, a new co-worker made me some date flapjack, I fell in love.

Thanks Argyllie, look forward to trying these, as will John. Good job he takes all day to mow the extensive areas of grass we have - it helps him wear off the cooking I love doing. :lol:

argyllie : how long do these stay fresh for ??? does the apple go off if left for a couple of days ... Cheers Dave  :)

Sorry I couldn't tell you Dave, they've never lasted long enough!  :D They go in the fridge obviously, when all cut into pieces and I can't see why they wouldn't freeze.

A sandwich tin is this sort of thing, Trillium. You'll no doubt have a different name for it.

Sorry I couldn't tell you Dave, they've never lasted long enough!  :D They go in the fridge obviously, when all cut into pieces and I can't see why they wouldn't freeze.

Right ta girl  :D i'm planning on making a load of these all at once ... so i'll bang them in the freezer  :)
